Fall is one of our favorite times of year! We are pretty lucky here in Michigan to experience ALL 4 seasons, and enjoy some of the best fruits and veggies grown fresh just-down-the-road. Our crazy Michigan weather actually happens to be the PERFECT climate for growing some of the tastiest apples- in fact, we are the nation's third largest producer! How cool is that?! Apple picking (and eating) is a tradition we look forward to every year!
And, like many parents, one of our goals raising a family is to help our kids learn the importance of healthy eating. Our girls are generally prettyyyyy good at eating their fruits and veggies on their own, but making them part of a fun, kid-friendly board always helps!
We are also huge fans of peanut butter so when I started making this 3 ingredient apple dip (recipe below) for the girl's lunches and for snack, it was a HIT! Add it to a board of other snacks they love, and it's a total win!
Ingredients:
1/2 c. plain Greek yogurt
1 tsp honey
1 tbsp peanut butter
ground cinnamon for garnish
1-2 Michigan apples
Preparation:
1. In a bowl, add the Greek yogurt, 1 teaspoon of honey, and peanut butter and stir to combine.
2. Dust with cinnamon
3. Serve with apple slices
4. Enjoy (it really is THAT easy- and SO good!)
Oh- and incase your kids are funny about "brown apples" like ours, I've got the perfect solution:
Mix 1/2 tsp salt into 1 cup of cool water until dissolved, add your sliced apples and soak for about 10 min. Drain the apples and store in an airtight container for up to a week. Works like a charm, and no complaints!
